These gooey centred cookies are my go-to when I want a sweet treat for pudding/afternoon snack and I don’t have much in the cupboard!
You can switch up the egg whites for whole eggs or a vegan alternative, I tend to buy large bottled whites from TwoChicks or MyProtein so always have in large quantities!
- 8 tblsp egg whites
- 3 tblsp milk
- 2 tblsp cacao nibs
- 3tblsp coconut flour
- 1 tblsp coconut sugar
- 2 tblsp cacao powder
- 1 tsp baking powder
- 4tblsp oats
Mix the ingredients in a bowl and then spoon tablespoon sized pieces onto a lined baking tray.
Bake at 180’C for about 13mins (until they are firm to touch!)
